Don’t wash your mushrooms!

If you wash mushrooms they WILL go soggy and horrible. If a recipe says “clean your mushrooms” use a piece of kitchen towel to rub away dirt. A bit of dirt on mushrooms probably isn’t going to hurt you anyway as you will usually be cooking the mushrooms.
