Pork in Cider & Cream Sauce

This is a very easy recipe and just needs a bowl and a microwave. My timings are based on an 800 watt microwave so adjust the timings to suit your own appliance. This works well with microwaveable rice so if you want to use only one bowl I recommend a pack of the rice you microwave for a couple of minutes.

The recipe was given to me many years ago by my friends Ian and Sue who taught me to appreciate good food and simple food and that all food is good with eaten with friends. I miss my best friends but remember them everytime I eat one of their recipes. I hope you enjoy this recipe and eat it whilst making memories of your own.

Ingredients

  • A good sized knob of butter
  • Onion (medium sized)
  • Pork Fillet (between 300g and 500g)
  • Dry Cider (you will need around a litre)
  • 300g Mushrooms
  • Two tablespoons of cornflour
  • 300ml Double Cream
  • Pack of Microwaveable Rice

Preparation

  1. Peel and thinly slice the onion
  2. Wipe the mushrooms clean and thickly slice them
  3. Mix a tablespoon of cornflour into a mug of water
  4. Cut the pork fillet into bite sized chunks

Method

  1. Put the butter in a bowl and microwave it for 1 minute until it is melted.
  2. Stir the sliced onions in the butter so they are well coated and microwave for 5 minutes.
  3. Add the pork, stir everything well so everything is well coated. Microwave for 8 minutes.
  4. Add the sliced mushroom, stir well.
  5. Pour cider into the bowl so that it just covers everything and microwave for 12 minutes.
  6. Pour the water / cornflour mixture into the bowl and stir it really well. Microwave for 3 minutes. If the mixture does not look thick enough put two more tablespoons of cornflour and half a cup of water into a mug and stir really well and then stir it into the bowl and microwave it again for another 1 minute.
  7. Add the double cream and stir everything really well. The contents of the bowl should have a nice creamy consistency and not be runny or thin.
  8. Cover the bowl with foil whilst you microwave the rice.
  9. Serve a portion of the pork in cream with rice on the side.

Tips

Instead of cornflour and water you can use thickening granules.

A pack of pre-sliced mushrooms saves time and washing up.

If you have some cider left over I recommend you drink it.
