Pork With Bacon in Tomato Sauce

Comfort food for a cold winter night. Serve with pasta twists, chips, or roasted potatoes.
Ingredients
- Butter
- 2 tablespoons of olive oil
- Pork fillet medallions OR pork fillet
- Pack of unsmoked back bacon
- 300ml Single Cream
- Medium Onion
- 2 tablespoons tomato puree
- Can of chopped tomotoes
- 3 Garlic Cloves
- Salt & Pepper
- Fresh Basil
Preparation
- Pre-heat oven to 180 degrees C (gas mark 5)
- If using pork fillet cut into slices about the same width as a slice of bacon
- Peel and roughly chop the onion
- Thinly slice the garlic cloves
- Roughly chop the fresh basil leaves
- Start cooking pasta, chips, etc. about 20 minutes after meat goes in the oven.
Method
- Lightly grease a casserole dish with the butter.
- Wrap each pork medallion or slice of fillet in a slice of bacon and arrange them in the bottom of a casserole dish.
- Saute the onion over a low heat until transparent and softening for about 5 minutes.
- Add the garlic slices and continue sauteeing for about 2 minutes.
- Add the tomatoe puree, stir well, and cook for 1 minute.
- Add the can of tomatoes (with their juice), stir well, and cook for 5 minutes stirring occasionally.
- Add the basil leaves and some salt and pepper to taste.
- Add the single cream, stir the sauce well, and cook for 2 minutes.
- Stir well and pour the sauce over the meat so that it is evenly covered.
- Cook in middle shelf of oven for 30 to 35 minutes or until meat is cooked all the way through.
- Serve with pasta, chips, and/or veg.
