Seafood Pasta

This is a very quick and easy recipe and uses a pack of frozen mixed seafood. You can use spaghetti, penne, or any other pasta you have in the cupboard but I prefer it with Linguine.
Ingredients
- 1 tablespoon Olive Oil
- 1 Onion
- 1 Garlic Clove
- 1 teaspoon Paprika
- 1 can Chopped Tomatoes (400g)
- 4 Chicken Stock Cubes
- 400g Linguine Pasta
- 400g Frozen Seafood Mix (defrosted)
- Fresh Parsley (optional)
- Lemon (optional)
- Parmesan Cheese (optional)
Preparation
- Roughly chop the onion
- Finely chop the garlic
- Make chicken stock using 1000ml of boiling water
- Break the linguine roughly
- Defrost the seafood mix
- Chop the parsley leaves (if using)
- Cut the lemon into wedges (if using)
- Grate the parmesan cheese (if using)
Method
- Heat the olive oil in a frying pan
- Cook the onion for about 4 minutes over a mediumn heat until soft and transparent
- Add the garlic and cook for about 1 minute until you can smell it (don’t burn it)
- Add the paprika, the can of tomatoes (including the juice), and the chicken stock then turn the heat up bring it to the boil
- Turn the heat down to a simmer and stir in the broken pasta
- Cook for about 7 minutes stirring occasionally to stop the pasta from sticking and clumping
- Stir in the seafood mix and cook for about 3 minutes
- Add salt and pepper to taste
- Serve with chopped parsley leaves and parmesan sprinkled over (if using)
