Chorizo in Honey and Red Wine

This is fantastic either as a tapas dish or as a starter for our Veal recipes. Using dried chorizo is OK but you may prefer to use the small chorizo cooking sausage and chop them roughly.
Ingredients
- 1 Tablespoon of Olive Oil
- 1 Onion (or 2 shallots)
- 3 Large Garlic Cloves (or 2 Tablespoons Lazy Garlic)
- 500g of Chorizo (dried or sausages)
- 100ml Red Wine (preferably Spanish!)
- 1 Tablespoon of Clear Honey
- Fresh Parsley
Preparation
- Finely chop the onion
- Finely chop the garlic
- Cut the chorizo into chunks or slice the sausages in half at an angle
- Roughly chop a few tablespoons of the fresh parsley
Method
- Gently heat the olive oil in a frying pan and saute the chopped onion until it softens and looks a little transparent (do NOT let it burn or go brown!).
- Add the garlic and cook for a couple more minutes (it’s OK for the onions to brown very slightly at this point).
- Add the chorizo to the pan, turn the heat up, and (stirring constantly) get it nice and brown so that the oil is released.
- Add the wine.
- Stir in the honey.
- Cover the pan and cook on a low heat for around 5 minutes until the sausages are cooked through. If the pan looks a bit dry add a couple of tablespoons of hot water.
- Scatter with the chopped parsely and server immediately with crusty bread and salted butter.
