Chocolate Lava Pudding

I’ve lost count of how many times I have made this and it never fails to complete a meal. A delicious mess of cake and dark chocolate goo that bursts out when hit with a spoon! These are great served with fresh, halved strawberries and double cream.
Ingredients
- 150g of good quality dark chocolate (at least 72% cocoa).
- 150g of salted Butter
- 85g of sugar (caster sugar is best)
- 3 Egg Yolks
- 3 Whole Eggs
- 1 Tablespoon of Plain Flour
- Double Cream (optional)
- Strawberries (optional)
Preparation
- Heat your oven to about 180 degrees (C).
- Break the chocolate into small chunks.
- Break the butter into small chunks.
- Bring a pan of water to the boil.
- Grease some small oven safe pots with butter (I use ramekins as they are the right size for these puddings).
- Hull and halve the strawberries if you using them.
Method
- Put the chocolate, butter and sugar into a bowl and put it over a saucepan of water. I have a steamer and so I usually but the bowl into a steamer basket and cover it.
- Stir the mixture occasionally until it’s all melted together and is a uniform colour with no butter floating around.
- Tip the mixture into a bigger bowl and add the whole eggs and the separated egg yolks.
- Add the flour.
- Mix everything together using a whisk.
- Pour the mixture evenly into the pots.
- Put the pots on a baking tray and put them on the middle shelf of your oven for seven or eight minutes.
- Take them out of the oven, cover in double cream and some strawberries and serve.
