Sizzling Garlic Prawns

As a lover of all things Spanish this is one of my absolute favourites. It is very close to what you will find served in Lanzarote.
Ingredients
- 2 packs of frozen raw King Prawns
- 4 Tablespoons of finely chopped Garlic (Easy Garlic is fine)
- 4 Cloves of Garlic
- 4 dried Chillies
- 1 Tablespoon of Salt
- 200ml of Olive Oil
- 1 Tablespoon of Fino Sherry (optional)
Preparation
- Defrost the prawns – if you need to do this quickly put the bags in your kitchen sink, cover in really hot water, and hold them under the water by dropping a dinner plate on top of them.
- When they are defrosted tip them onto a clean tea towel or kitchen roll and pat them dry. They should be as dry as you can get them.
- Peel and thinly slice the garlic cloves.
Method
- Put a frying pan on a very high heat and then drop the salt in.
- Add the olive oil, 4 tablespoons of the chopped garlic, and the dried chillies.
- As soon as the chopped garlic starts to fizz and the oil is bubbling carefully add the thinly sliced garlic and the prawns.
- Keep an eye on the prawns and as soon as they are pink all the way through carefully add the sherry.
- Shake the pan and remove it from the heat.
- Spoon the sizzling oil and prawns with the garlic and chillies equally into bowls.
- Garnish with fresh parsley if you are using it.
- Serve with crusty bread and soft salted butter.
